Ingredients
1 cup Arborio rice or sushi rice
2 cups of vegetable stock
1 green apple
1/2 cup of coriander
1/2 cup of mint
A handful of raisins
1 lemon
Cumin, turmeric, salt, pepper and sesame seeds to taste
Method
1 Prepare the rice
2 Chop the green apple, mint and coriander
3 Add turmeric and a handful of sultanas
4 Mix everything together
5 Add lemon juice and olive oil
6 Roll the rice mixture with sesame seeds to create the balls
